Adhesive Protein Nanoparticles Control Emulsion Properties via Tunable Interdroplet Linking (Small 61/2026)
Microfluidics A multi-length scale experimental approach spanning single interfaces, thin liquid films and bulk emulsions was combined with theoretical underpinning and used to unveil the mechanism and driving forces behind adhesive self-assembled protein nanoparticles. Using this understanding, in Research Article e75117, Constantinos V. Nikiforidis and co-workers developed a powerful non-invasive method to tune emulsion mechanical properties using a sustainable, low-cost natural resource.
