Exploring the Functional, Pasting, and Bioactive Potential of Moringa oleifera Leaf Powder from South Lampung, Indonesia

Moringa oleifera leaves (MOL) are widely distributed in Indonesia, including South Lampung, and contain nutrients and bioactive compounds, but are highly perishable. Processing MOL into Moringa oleifera leaf powder (MOLP) improves stability and utilization. However, distinct agroclimatic conditions may influence MOLP properties, and information on MOLP from South Lampung remains limited. This study aimed to characterize the functional, pasting, bioactive, and Fourier transform infrared (FTIR) properties of MOLP. The water absorption capacity, oil absorption capacity, water solubility index, and swelling power of MOLP were 2.22 g/g, 1.45 g/g, 50.32%, and 114.55%, respectively. Pasting analysis showed peak, trough, breakdown, final, and setback viscosities of MOLP were 40.00, 39.00, 1.00, 88.00, and 49.00 cP, respectively, with a peak time of 12.80 min. MOLP contained total phenolic content of 8.33 mg GAE/g and flavonoid content of 3.55 mg QE/g. FTIR analysis identified functional groups potentially associated with phenolic and flavonoid compounds.
