PONTASTACUS LEPTODACTYLUS ХИТИНИДАН ХИТОЗАН ОЛИШ ВА АНТИМИКРОБ ФАОЛЛИГИ
The study investigated the technology for obtaining chitosan from the shell of the long-clawed crayfish (Pontastacus leptodactylus), which is widely distributed in the Tudakul Reservoir, as well as its antimicrobial activity. Chitosan with a molecular weight of 780 kDa and a degree of deacetylation of 84% was obtained and demonstrated high antimicrobial activity against Candida albicans and Escherichia coli. It was established that crayfish shells are a promising local raw material for chitosan production.
