Cambio tecnológico y disminución en el precio de la carne de pollo en México, 1994-2021
The objective is to demonstrate that technological change, measured by the amount of poultry meat obtained per unit of feed (corn-soybean), was the main factor explaining the decrease in the price of this meat. The methodology used was a spatial equilibrium model for the chicken meat market in Mexico for the year 2021. Results show that technological change was the main variable explaining the decrease in the price of this meat, while other factors ─such as the fall in the prices of competitive products and inputs used in feed─ also favored such a decrease. The main conclusion establishes that technological change is a way to face the challenge of the constant growth in the demand for poultry meat.
