ОПРЕДЕЛЕНИЕ ОСТАТОЧНОГО СОДЕРЖАНИЯ ГОРМОНОВ В МЯСЕ НА АНАЛИЗАТОРЕ RANDOX
Control over the safety of meat and meat products is a set of measures aimed at preventing and minimizing the risks associated with food infections, toxicants and physical pollutants. It covers all stages – from feed production and animal husbandry to processing, storage, transportation and sale of finished products. The purpose of this study was to determine the residues of hormonal growth stimulants in animal tissue samples. In particular, it set itself the following objectives: 1) quantify the residues of hormonal growth stimulants in meat (beef, horse meat, pork, lamb) and meat products (sausages, sausages, sausages); 2) assess whether the concentrations of residues exceed the permissible limits. The obtained research results are intended to fill the existing gap in the study of the determination of hormonal growth stimulants in meat and meat products, as well as to support the improvement of methods for their detection and establish the need for an integrated approach to risk reduction. Nine target compounds were selected as control objects: Boldenone, Zeranol, Ractopamine, Corticosteroids, Nandrolone, Stilbenes, Trenbolone, Stanozolol, and β-Agonists. The maximum permissible concentrations of these substances are set at 0.1 to 1.4 mcg/kg, with the strictest limits set for Trenbolone (0.1 mcg/kg) and beta-agonists (0.2 mcg/kg), and milder ones for Nandrolone (1.4 mcg/kg) and Stilbenes (0.9 mcg/kg). The study analyzed 44 samples of various types of meat products, including pork, lamb, horse meat, beef, poultry meat and sausages.
