THE ROLE OF AGROCHEMICAL MONITORING IN ENSURING FOOD SAFETY OF WHEAT PRODUCTS
Wheat and other cereal crops are agricultural products of strategic importance for the food supply of the world's population.Against the background of population growth and increasing demand for food, it is important not only to increase the productivity of grain crops but also to ensure the safety of grain products. The aim of this structured literature review is to assess, on the basis of published scientific and regulatory sources, the impact of the main chemical contaminants found in wheat and grain productspesticide residues, nitrates and nitrites, heavy metals, mycotoxins and other toxic substanceson food safety, and to determine the role of agrochemical monitoring. The reviewed evidence indicates that agrochemical control systems applied along the soil-plant-grain chain help to keep the content of hazardous substances in wheat products within regulatory limits and to minimize potential risks to human health.Maximum levels of contaminants, health-based guidance values (ADI, TDI, ARfD) and exposure-based risk indicators (EDI, HQ, HI, CR) are identified in the literature as the main criteria for assessing the food safety of wheat products.
