Peningkatan Nilai Tambah Komoditas Pisang Melalui di Versifikasi Produk dan Transfer Teknologi Pengolahan pada Masyarakat Nagari Piobang, Kabupaten Lima Puluh Kota

Nagari Piobang, located in Lima Puluh Kota Regency, possesses considerable potential for banana production; however, its utilization has so far been limited to fresh-sale marketing, which yields only low added value. This community-service activity aimed to introduce local residents to the diversification of processed banana products and to facilitate the application to appropriate processing techniques for optimizing the utilization and value addition of this local commodity. The activity was carried out with the participation of approximately 20 individuals, predominantly young women comprising housewives and small-business operators. The implementation methods comprised counseling, demonstration, hands-on practice, and evaluation. The demonstrated products included banana nuggets, banana balls, molten chocolate bananas, chocolate-coated banana chips, and banana brownies. The results of the activity indicated that participants actively engaged in the hands-on processing sessions and were able to follow all stages of the processing practice. These observations indicate that the activity facilitated the transfer of processing technology and provided participants with direct experience in applying the demonstrated techniques. The resulting products exhibited favorable sensory characteristics and hold potential for development into home-scale enterprises, given that the processing procedures are straightforward, the raw materials are readily available, and the products possess market appeal. Furthermore, food diversification can support family nutritional needs. Overall, this activity contributes to community capacity building, the strengthening of the local economy, and the sustainable utilization of the banana commodity.
