Evolution of Approaches to the Study of Hotel Business Services
The article provides a comprehensive analysis of the evolution of approaches to studying hospitality services—from the earliest forms of guest accommodation to modern high-tech models of hotel management. The work traces the historical development of the industry, beginning with the first prototypes of hotels that emerged in ancient civilizations and were primarily aimed at ensuring the safety and basic comfort of travelers. It examines the formation of hospitality practices in Europe and Russia, as well as the influence of urbanization, the transportation revolution, and the expansion of trade and pilgrimage routes on the development of stable accommodation systems. Particular attention is given to the nineteenth century—a period marked by industrialization, rising living standards, and the reduction of working hours, which together created the conditions for the rise of mass tourism. The article analyzes scholarly approaches of that era, which focused on efficiency, organizational models, and the economic performance of hotel enterprises. Another section explores the emergence of hotel chains and the formation of global brands, which ensured consistent service standards, the scaling of best practices, and the development of unified corporate quality across multiple properties. The study also emphasizes that the modern hospitality industry requires an interdisciplinary research framework, as its development is shaped by technological innovation, economic dynamics, consumer behavior, and the principles of sustainable development.
