SUBJECT THEORY: A NEW PARADIGM OF NUTRITION AND HEALTH
Nutrition determines up to 70% of the state of health, but there is still no fundamental scientific theory explaining the mechanism of this influence. Modern dietetics evaluates food mainly by its calorie content and macronutrient content, ignoring tens of thousands of molecular compounds, as well as toxic agents formed in nature, during processing and storage. This creates a gap between the real chemical composition of the product and its metabolic effect. This series of works presents the theory of objects, a new paradigm of nutrition and health. Its central provisions: 1. Food does not supply ready-made metabolites. It supplies subjectabols, molecular compounds from which the body synthesizes active metabolites on its own. The fundamental difference between subjectabols and metaboles changes the understanding of nutrition. 2. A product is not a category, but a vector of parameters: name, variety, origin, method of production, condition, freshness, storage conditions. Only the totality of these parameters determines the metabolic profile. 3. The product is evaluated according to two independent axes: Item Density (PP) — the number of beneficial molecular species; Toxicity Index (IT) — the number of harmful species. The product profile is recorded as PP/IT. 4. Metabolic diversity is distributed across 18 meta-compartments of the body. Age-related impoverishment of the metabolome begins imperceptibly and becomes critical by the age of 55, but remains reversible. 5. The methodology for calculating PP and IT is open, reproducible, and scientifically based. It includes class-specific thresholds, A/B/C/D evidentiary levels, production, freshness, and storage ratios, category of dose-dependent molecules, cocktail effect, peer-to-peer reliability, and validation. 6. The PCB takes into account only bioavailable molecules. If the bioavailability of a molecule is less than 1%, it is excluded from the PC. If a molecule is converted by the microbiota to a bioavailable metabolite, it is counted by metabolite. The principle of bioavailability is a fundamental filter of the metabolic value of products.
