ХАРЧОВІ ДОБАВКИ З ВИНОГРАДНОГО НАСІННЯ ТА ЯДЕР КІСТОЧКОВИХ ФРУКТІВ
A number of oilcake-based dietary supplements have been developed. The oilcake material was obtained from: grape seeds (cultivar Cabernet harvested in 2019); kernels of apricot stones (cultivar Shablovsky harvested in 2020); kernels of cherry stones (cultivar Lotivka harvested in 2021); kernels of peach stones (cultivar Cardinal harvested in 2020); kernels of plum stones (cultivar Uhorka harvested in 2022). All types of oilcake resulted from processing grape seeds and drupe kernels into fat-and-oil products. Comprehensive research has been conducted on the nutritive and biological value of the special-purpose natural dietary supplements obtained using the technology developed. Their fatty acid and (in the grapeseed-based supplement) polyphenolic compositions have been analysed. The sensory, rheological, physicochemical, and microbiological properties of the supplements have been studied, and the safety parameters of the final products have been determined. The figures and photos show the solubility of the natural supplements obtained. The experiments have proved that all the supplements are effectively water-soluble at 35 °C. They dissolved but partly at temperatures as low as 20, 25, 30 °C and left undissolved matter behind, while at 35 °C, complete dissolution was observed. The presented findings of sensory evaluation make it clear that all samples of the supplements had positive characteristics pertaining to a certain product. The supplements are storable for not longer than 3 months after they are packaged in stick packs (2 g net weight each) and polymeric jars (50 g net weight each). The 4th month of storage showed accumulation of quantities of mesophilic aerobic and facultative anaerobic microorganisms (QMAFAnM) and yeast. As for pathogenic microorganisms, including salmonella and coliform bacteria, they were absent.
