Evolution of Awadhi Cuisine: From Nawabi Elegance to Modern Gastronomy
Abstract Awadhi cuisine represents one of India's most refined culinary traditions, renowned for its delicate flavours, aromatic complexity, and sophisticated cooking techniques. Although its origins lie in the broader culinary traditions shaped by Mughal, Persian, Central Asian, and indigenous North Indian influences, the cuisine attained its distinctive identity under the patronage of the Nawabs of Awadh, particularly in Lucknow. This paper traces the historical evolution of Awadhi cuisine from its Mughal foundations through the innovations of the Nawabi courts, its transformation during the colonial period, and its continued adaptation in the contemporary era. Particular emphasis is placed on signature dishes, characteristic ingredients, and traditional techniques such as dum pukht (slow sealed cooking), which exemplify the region's culinary philosophy of balance, aroma, and refinement. The study further examines the impact of globalization on the dissemination and reinterpretation of Awadhi cuisine in both fine-dining establishments and popular street-food culture. Finally, it discusses the challenges of preserving culinary authenticity amid commercialization and changing consumer preferences, and proposes strategies for safeguarding this rich gastronomic heritage while encouraging sustainable innovation. Keywords: Awadhi Cuisine, Mughal Influence, Gastronomy, Nawabi Era, Modernization, Dum Pukht, Culinary Heritage.
