Proposta de projeto de pesquisa para solicitação de Bolsa no País - Pós-Doutorado / Fluxo Contínuo
Abstract: The present study, along with the other approaches of the SENSORIA-2 Project to which it is linked, aims to reduce waste in the avocado processing by implementing integrated processes to generate high-value-added products. The strategy involves optimizing green extraction techniques to obtain bioactive compounds from agro-industrial residues (peels and seeds). A sequential approach will be employed, combining supercritical CO2 extraction and pressurized liquid extraction using natural deep eutectic solvent (NADES) mixtures. Measuring antioxidant and antimicrobial activity, alongside characterizing major and minor extract compounds via advanced chromatographic techniques, will be crucial for selecting the most promising extract to incorporate into the subsequent stage: the development of cleaner label meat products. The extract's efficacy in replacing synthetic additives in fresh pork sausages will be evaluated by assessing the effects of different concentrations on stability and quality parameters during refrigerated storage, as well as the impact on sensory acceptance and technological properties. During the project's execution, the candidate will supervise the laboratory activities of undergraduate and graduate students, particularly those related to the associated Thematic Project. Research results will be disseminated to diverse audiences, including the scientific community, the industrial sector, and the general public. Thus, the integration of a more sustainable agro-industrial system, the utilization of plant residues, and the generation of high-value-added products with potential application in the meat sector form the core pillars of this proposal.
