Metal organic framework composites for xylanase immobilization and their applications in food industry

Metal organic frameworks (MOFs) have emerged as an effective in case of enzyme immobilization as they have versatile structural and chemical properties. Xylanase, an enzyme that breaks down xylan into xylose and xylooligosaccharides, has significant industrial relevance. Xylanase immobilization on MOFs enhances enzyme characteristics such as stability, catalytic activity, and reusability. Recent research has reported the efficacy of specialized matrices such as manganese-doped ZIF-67, functionalized UiO-66-NH2, and magnetic Fe3O4@PDA@MOF. These composites utilize diverse xylanase immobilization through different strategies like physical adsorption, covalent tethering, and in situ encapsulation. The integration of xylanase with MOFs has led to promising advancements in biocatalysis offering sustainable and efficient solutions to industrial challenges. The development of MOF based enzyme immobilization techniques has biotechnological applications such as biobleaching, biofuel, food and feed. This review highlights the synthesis and characteristics of MOFs for xylanase immobilization and their application in food sector.
