Engineered Porous Materials for the Recovery of High‐Value Anthocyanins From Food Sources: Adsorption‐Based Separation and Purification

The effective isolation of bioactive compounds from natural sources is essential for the recovery of high-value functional products. Anthocyanins (ACs), known for their exceptional antioxidant and anti-inflammatory properties, present a considerable challenge in achieving optimal selectivity and high adsorption capacity due to their highly labile structure and low abundance in food matrices. Utilizing porous materials for ACs separation and purification has emerged as a promising technology, benefitting from their controllable pore structure and pore chemistry of such materials. The pore characteristics of porous materials play a critical role in determining the adsorption capacity, adsorption kinetics, and desorption efficiency of ACs. This review provides a comprehensive overview of the recent advancements in utilizing various porous materials including macroporous resins (MRs), metal-organic frameworks (MOFs) and covalent-organic frameworks (COFs) for separation and purification of ACs from food sources. This review focus on the elucidation of structure-property relationships between the pore structure of these porous materials and the adsorption/desorption properties of ACs. Considering the structural characteristics (e.g., molecular size, functional groups) of ACs, the critical parameters of porous material influence on the separation performance, which include host-guest interactions, pore size, and inner pore surface properties, are critically discussed. This review aims to provide valuable insights into the screening and rational design of high-performance porous materials for separation of ACs.
