Optimized Liquid Ion Mobility Electronic Tongue ( <scp>LIM</scp> ‐ <scp>ET</scp> ) With Enhanced Sensitivity and Resolution for Rapid Food Analysis

ABSTRACT Given the importance of sensitivity and compositional resolution to electronic tongue technology, this study developed a liquid ion mobility electronic tongue (LIM‐ET). LIM‐ET integrated an ion drift tube with a feature extraction algorithm within a hardware‐software platform comprising injection, drift, and detection modules. Stable current signals (4 nA, CV = 4.66%) were achieved at 3500 V. Key parameters‐drift length (5 mm), pulse voltage (3500 V), and field strength (800 V/cm)‐were optimized through the design of experiments methodology, resulting in significant enhancements in sensitivity. Quantitative analysis demonstrated linear responses ( R 2 = 0.91–0.99) for 10 analytes. The system successfully identified characteristic drift peaks in binary mixtures and achieved a discrimination index of 78.92 for beverage samples. This work presented an innovative approach for rapid liquid food assessment, thereby potentially broadening the application prospects of ion mobility technology in food analysis.
