Pulse Consumption in France: Trends, Determinants and Demand Modelling

This working paper provides insight on the determinants and trends of pulse consumption over time in France using data from the Kantar Worldpanel (KWP) database. We first estimate a Truncated Normal Hurdle (TNH) model to analyze how the decision to purchase pulses and the quantity purchased are impacted by socio-demographic variables characterizing French households. We then evaluate how prices affect the consumption of different types of pulse-based products. We choose the censored Exact Affine Stone Index (EASI) model and compute the expenditure and price elasticities. Funding acknowledgementBrightSpace is funded by the European Union.
