A comparative dataset on LC-MS analysis of sea buckthorn berries pulped extract juice phytocompounds and metabolomics on probiotic fermentation

Probiotics are well known health promoting bacteria that are lately being explored for a dynamic metabolome, under different fermentation conditions and different substrates. This may be attributed to the diverse metabolite regulation of cellular metabolic pathways. The article presents a unique comparison of the metabolomes of Lactobacillus plantarum fermented Sea buckthorn berries pulped extract, filtered Sea Buckthorn juice, and De Man, Rogosa, Sharpe (MRS) medium with the phytocompounds profile dataset of Sea Buckthorn Berries Pulped Extract Juice. Lactobacillus plantarum MTCC1325 was cultured and maintained in MRS medium and was further cultivated in Seabuckthorn berries pulped extract and filtered Seabuckthorn juice for 3 days. The unfermented juice was analysed for phytocompounds consortia and compared with the fermented juice and MRS medium, using Liquid Chromatography–Mass Spectrometry (LC-MS). The study explored a few rare compounds in fermented juice for anticancer, neurological, and other disease applications. The in-silico prediction of absorption, distribution, metabolism, excretion (ADME) of the selected phytoconstituents and metabolites was reviewed for water solubility, lipophilicity, pharmaceutics, and drug-likeness responses as per Lipinski’s rules.
