Analysing Chocolate: Unveiling Its Composition and Health Implications
Objectives: The study describes the interesting journey of chocolate through the lenses of science, culture and history. It discloses the mystery behind such as how chocolate evolved from a divine gift enjoyed by ancient Mesoamerican civilizations to a cherished delicacy across the world today. The research also examines the chemical constitution of chocolate to understand the nutritional values, sensor appellate and possible impacts on human health. Methods: Samples of different chocolates were collected from nearby market. The samples so obtained were analysed to identify the presence of different key components – protein, fats, sugars, and mineral ions. For investing the presence of different constituents, standard chemical methods were employed. Findings: According to the study, it was found that the chocolate has evolved for over centuries from the luxury of Europe in 16th century to a widely available sweet in variety of forms, such as dark, milk, and ruby chocolate. With the rise in the demand and need for innovation to be suited to every individual has resulted in new varieties, such as sugar-free and organic chocolates, that satisfy the contemporary dietary requirement of the time. However, the study also explains the adverse effect of excessive consumption on human health because of high calorie and sugar content. The presence of stimulants such as caffeine and theobromine in chocolate also adversely effects the human health. Novelty: On combining the historical insights along with chemical analysis, the work offers an in-depth understanding of chocolate, its evolution and, health relevance. This work is an important scientific contribution towards better quality control, nutritional evaluation, and further research in aspects of chemistry and well-being related to chocolate.
