Permeability and solubility of chitosan biofilms formed with different concentrations

The use of edible biofilms in food packaging reduces the use of petrochemical polymers that are harmful to human and environment. Chitosan as seemed most abundant in nature biopolymer could be used in forming biofilms to preserve food. The main aim of this work is to study some properties of biofilms that formed from different concentrations of chitosan (1.0, 1.5 and 2%) at different stirring speeds (600, 920 and 1240 rpm) and different temperatures (30, 40, 50, 60, 70 and 80 °C). Water evaporation rate solubility of these films were studies. To achieve this, Bio-films with different concentrations of natural bio-materials such as chitosan were formed at different temperature and stirring speeds. The water vapor permeability and water solubility of these biofilms were studied. The results indicate that the evaporation ratio increases with increasing temperature of magnetic stirrer and stirring speed and it decreases with increasing chitosan concentrations film-forming solutions. The highest value of evaporation rate (44.43%) was found with 1.0% concentration of film solution at 80°C temperature and 1240 rpm magnetic stirrer speed. the highest value of water solubility (20.88 %) was found with 8.0 g quantity of casting solutions and 2.0% concentration film-forming solutions, while, the lowest value of water solubility (6.30 %) was found with 9.5 g quantity of casting solutions and 1.0% concentration film-forming solutions. The weight of chitosan solution to form its film decreases with increasing drying time and increases with increasing concentrations of chitosan solution.
