The commodity coffee layout drying process impact on the logistics and operationalization flow related to the time optimization in the coffee beans post-harvest drying process

The coffee drying structure layout represents an important element in the commodity coffee production, mostly because it is responsible for the post-harvest operation and performance process. The research goal is to put together all the information needed for the comprehension of the infrastructure as a business that focuses the best production way, based on theoretical and conceptual foundation on architecture, agronomy and administration. Based on the material and on the Process Sorted Search methodology could have been done a case-study on Vitória Farm, analyzing its structure, machines and production sequence, understanding the stages to the coffee drying and processing. Based on it, the study presents the necessity of a structure aligned to productions steps, the needed of different knowledge to come up with a layout implantation, as well as the compatibility of existing information due to rural development.
