Evaluating the Sustainability of Vertical Farm-Grown Amaranth as a Protein-Rich Crop
This study evaluates the environmental impacts associated with the production of four selected strains of amaranth within a vertical farming system. Several energy scenarios were modelled, including regional grid electricity and potential renewable energy sources, to assess their influence on carbon footprint outcomes. Impacts were assessed using two functional units: per kilogram of fresh weight and per unit of protein produced. The findings will provide insight into the role of energy sourcing in determining the sustainability of VF-grown amaranth and highlight its potential contribution to more resilient and low-impact food systems.
