Recipe handbook: 42 recipes designed for European school canteens
This handbook contains 42 recipes that have been specially designed for use in European school canteens. The aim is to encourage the adoption of good, healthy, sustainable dishes. The recipes were conceived, designed and revised by school catering chefs from 12 European countries involved in the SchoolFood4Change project. These countries are Austria, Belgium, the Czech Republic, Denmark, Estonia, France, Germany, Italy, Spain, Slovakia, Sweden and Hungary under the coordination of the University of Gastronomic Sciences of Pollenzo. This cookbook brings together different voices, skills and culinary cultures to support the design of nutritious and sustainable school menus. It is intended for school catering chefs, dieticians, teachers, canteen staff and parents. Not only that. The manual is also a practical application of the principles and content of the School Menu Design Handbook, which was shared with chefs during online and in-person training sessions in Pollenzo in 2023 and 2024. As well as guiding the step-bystep creation of a dish, the recipe also serves as an integrated design and communication tool.
