A Study on the Chemical and Physical Characteristics of Starfruit
Starfruit (Averrhoa carambola) is a tropical fruit with noteworthy chemical composition, physical properties, and biological activities from a scientific perspective. This review aims to explain its chemical composition, health benefits, molecular structure of bioactive compounds, as well as its physical and chemical characteristics. The main constituents include vitamins (C, A, B-complex), minerals (potassium, magnesium, calcium), dietary fiber, and organic acids such as oxalic acid, citric acid, and malic acid. In addition, flavonoids, saponins, and tannins act as important phytochemicals. From a health standpoint, starfruit provides antioxidant effects, lowers blood pressure, boosts immunity, and promotes digestion. However, the high oxalic acid content poses a serious risk for individuals with kidney disorders. The chemical structures of key compounds include oxalic acid (C₂H₂O₄), citric acid (C₆H₈O₇), vitamin C (C₆H₈O₆), and flavonoids (e.g., quercetin, C₁₅H₁₀O₇). The physical properties of starfruit include a density of about 1.0–1.05 g/cm³, water content of 90%, energy value of 31 kcal/100 g, and a pH of 3–4. Chemically, starfruit is acidic, easily oxidized, and reacts to form calcium oxalate precipitates. Thus, starfruit represents a fruit with significant chemical and physical complexity, making it an important subject of further study both as a nutritional source and as a material for bioactive compound research.
