“ Study of the Chemical and Physical Structure of Melons (Cucumis melo) ”

Melon (Cucumis melo) is a fruit rich in important chemical compounds such as water, simple sugars (glucose, fructose, sucrose), vitamins (especially vitamin C and A in the form of beta-carotene), minerals (potassium, magnesium), fiber, and antioxidant compounds such as flavonoids and polyphenols. These contents provide significant health benefits, such as maintaining body hydration, boosting the immune system, protecting eye and skin health, and helping to control blood pressure. From a chemical structure perspective, simple sugars have a monosaccharide structure with a hydroxyl group, vitamin C is a cyclic ascorbic acid, and beta-carotene is a polyisoprene hydrocarbon that acts as a natural pigment. Physically, melons have a soft and juicy texture with colors that vary depending on the variety, while compounds such as glucose and vitamin C are water-soluble crystals, and beta-carotene is soluble in organic solvents. The chemical properties of melons include the reactivity of vitamin C to oxidation and the relative stability of sugar and beta-carotene to the environment. This study examines the relationship between the chemical structure and physical properties of melons to understand the role of their bioactive components in health benefits, as well as the physical and chemical characteristics that support the quality and functionality of melons as a source of nutrition.
