The Health Benefits of Fermented Rice: A Timeless Tradition

Abstract Fermented rice, a time-honored component of traditional diets across Asia, offers a unique combination of cultural heritage and nutritional value. This research investigates the health benefits of fermented rice prepared using parboiled rice and locally available ingredients such as curd, small onions, and green chillies. The fermentation process not only enhances the food’s digestibility and palatability but also increases the bioavailability of vital nutrients including B-complex vitamins, iron, calcium, and antioxidants. Additionally, the presence of natural probiotics supports gut health and strengthens the immune system. Field data from selected households reveal that regular consumption of fermented rice contributes to improved digestion, better hydration, sustained energy, and a cooling effect—especially relevant in tropical climates. This study underscores the significance of reviving traditional food practices like fermented rice consumption to address modern nutritional challenges, promote sustainable eating, and preserve indigenous food wisdom.
