Aproveitamento dos resíduos do processo de filetagem da tilápia do Nilo

Aquaculture activities are divided into extractive fishing and aquaculture, fish farming aims at high productivity and zootechnicalefficiency through genetic improvement and nutrition, it is a viable strategy to meet the growing demand for animal protein, standing out for its excellent nutritional quality. The objective was to carry out a bibliographical survey on Nile atilapia and the use of waste from the filleting process. The exploratory methodology was applied, with the survey of information and scientific works published between the years 1990 and 2024, on the platforms Periódicos Capes, Google Academic and Scielo. The results of bibliographical research demonstrated that Nile tilapia has been gaining prominence in Brazil and around the world. During the filleting process, waste with high nutritional value is generated, such as viscera, skin, heads, carcasses and scales, which can be used in the manufacture of flours, silages and oils for animal feed. The carcasses, containing remaining meat, can be pulped to obtain mechanically separated meat (CMS), used in breaded and sausage products. It is concluded that investing in the production and full use of Nile tilapia is a promising strategy for the sustainable development of aquaculture.
