Evaluación fisicoquímica y actividad antioxidante del aceite de la pulpa de aguacate hass (persea americana) en estado de oxidación
In the present research work the main objective was the characterization and evaluation of the oil from the pulp of the Hass avocado (Persea americana) in a state of oxidation. The oil was obtained from the pulp of the Hass avocado (Persea americana) in an oxidized state by means of extraction methods by heating and by dehydration, finding, among the main findings, a yield of 7.99% and 7%, respectively. Regarding its physicochemical properties, the following were obtained: for density a value of 0.9266 g / mL, for viscosity an average value of 49.5101 cP, its acidity index was 1.0 mg KOH / g oil, its titratable acidity of 0.5%, the saponification index of 180.789 mg KOH / g and its refractive index of 1.4688. In sensory evaluation according to the standard (NMX-F-473-SCFI-2012), a panel of 10 people was organized, obtaining in: Smell 100%, flavor 100% and appearance 100% acceptance, based on these results, the oxidized avocado oil obtained was determined as acceptable. Colorimetry was performed through the CIELAB coordinate system, given by a chromatic system, through the coordinates L * (luminosity) of 9.99 ± 0.06, a * (chromaticity on the green (-) to red (+) axis) of -0.42 ± 0.03 and b * (chromaticity on the blue (-) to yellow (+) axis) of 16.68 ± 0.16. In the antioxidant activity by DPPH●, 233.1333 mg eq Trolox/ g sample dry basis ± 0.1667 was obtained for fresh avocado oil and 47.7333 mg eq Trolox/ g sample dry basis ± 0.3 for oxidized avocado oil. In Total Polyphenols, 18.3667 mg eq GA/g sample ± 0.2333 was obtained for oxidized avocado oil and 111.8333 mg eq GA/g sample ± 0.1333 for fresh avocado oil.
