A study on chemical quality of khoa marketed in Nanded city

Abstract: The study was conducted to investigate the chemical quality of khoa marketed in Nanded city. Samples of khoa collected from hotellers, street vendors and halwais shops in Nanded. The chemical quality of khoa showed that moisture ,fat, SNF and total solids of market khoa samples have shown lower mean values than those prescribed by ISI standards. It might be due to utilization of partially skimmed milk for the preparation of khoa and keeping more moisture in khoa during preparation for obtaining more profit by getting more yield.
