Report on the functional and nutritional properties of the validated foodland new food products (D5.16)

This deliverable reports the results obtained from the characterization of the new raw materials, ingredients and food products that have been validated at industrial level following the analytical procedures and methods set up by each partner (D5.15). The functional and nutritional properties have been assessed as final step of the process conducted in all six target countries, considering the definition of the analytical methods, procedures, techniques, tools, and target properties (protocols, D5.15), the conduction of in lab tests (D4.12), and the scientific and technological description of the validated processes for the realization of the new foods (D5.11, D5.14).
