TRADITIONALLY INSPIRED FLAME-ROASTED SAUSAGE PROTOTYPE

CREATION OF A HIGH BIOLOGICAL VALUE, TRADITIONALLY INSPIRED FLAME-ROASTED SAUSAGE PROTOTYPE USING COMPLEX INDUSTRIAL TECHNOLOGY Deka Union Kft. has been awarded a non-refundable European Union grant of HUF 169.95 million under the Széchenyi 2020 program’s call for proposals titled "GINOP-2.1.2-8.1.4-16 Support for Corporate R&D&I Activities through a Combined Loan Product." The total cost of the project is HUF 309 million, and its implementation aims to develop the methodology for large-scale production of traditional flame-roasted sausage. This will be achieved by returning to the tried-and-true recipes and manufacturing techniques of our ancestors while considering the challenges of modern times. As the winning applicant of project ID GINOP-2.1.2-8-1-4-16-2018-00424, Deka Union Kft. is executing the project in full compliance with the program’s requirements and its own commitments. To implement the project, the company is providing 17% in self-financing, amounting to HUF 52.53 million, while the preferential loan component totals HUF 86.52 million. The investment is expected to be completed by December 31, 2020. The newly developed product/technology/prototype resulting from this project will be created through innovative technical and scientific advancements. Our development offers an alternative for the entire meat industry in the grilled sausage market by addressing logistical challenges and expanding export opportunities to distant foreign markets. Currently, the limited shelf life of fresh, grill-ready sausages significantly restricts export potential, making it nearly impossible to ensure continuous deliveries to far-off destinations. However, demand for high-quality, flavorful Hungarian products is steadily increasing. The product developed through this project will have twice the shelf life of similar existing products, combined with a uniquely bold and attractive flavor. The results of the product and packaging development efforts—the high biological value flame-roasted sausage—will be exclusively manufactured and distributed by the applicant in Hungary and several European countries. One of the company's owners, Hungary’s crowned "Sausage King," is leveraging his more than half a century of manufacturing experience in developing this new product prototype. As a result of this development, a high-quality, marketable product will be introduced to the entire sector, transforming everyday meals into culinary celebrations while enhancing the reputation of Hungary and Hungarian gastronomy.

Abstract

CREATION OF A HIGH BIOLOGICAL VALUE, TRADITIONALLY INSPIRED FLAME-ROASTED SAUSAGE PROTOTYPE USING COMPLEX INDUSTRIAL TECHNOLOGY Deka Union Kft. has been awarded a non-refundable European Union grant of HUF 169.95 million under the Széchenyi 2020 program’s call for proposals titled "GINOP-2.1.2-8.1.4-16 Support for Corporate R&D&I Activities through a Combined Loan Product."
