STUDY OF THE EFFECT OF EURYGASTER INTEGRICEPS ON THE QUALITY OF WHEAT GRAIN GROWN IN THE CLIMATIC CONDITIONS OF UZBEKISTAN
This research investigates the impact of Eurygaster integriceps (sunn pest) infestation on the quality of wheat grains grown in the diverse climatic conditions of Uzbekistan. The study focuses on four wheat varieties — Tanya, Yaksart, Durdona, and Javohir — to evaluate changes in gluten quality, proteolytic enzyme activity, and breadmaking properties under varying infestation levels. Laboratory analysis demonstrated a significant decline in gluten strength (up to 45%) and loaf volume (up to 35%) in severely infested samples. The enzymatic action of the pest's saliva weakened protein structures, adversely affecting dough elasticity and baking performance. Technological strategies such as thermal treatments, fermentation optimization, and blending methods were explored to partially restore flour functionality. The findings provide evidence-based recommendations for mitigating pest-induced damage during post-harvest processing to ensure food quality and safety in Uzbekistan’s wheat supply chain.
