Beef Carcass Quality

Beef quality encompasses many different organoleptic characteristics, but is primarily defined by three associated sensory factors: tenderness, juiciness, and flavor. The importance of beef quality stems from the purchasing power of consumers and their perception of meat quality. Initiating consumer beef purchases, allowing them to recur and ultimately retaining them, are entirely affected by the quality of meat offered to the consumer.
