Enzymatic Preparation of Donkey Bone Peptide and Its Biological Activities
ABSTRACT In this paper, donkey bone gelatin was used as raw material, and the enzymatic hydrolysis was optimized by one‐way and PB experiments as well as response surface, under which the hydrolysis degree of protein in donkey bone gelatin was 53.89%. After microfiltration and ultrafiltration (filtration by ultrafiltration membrane with molecular weight cutoff of 10 and 3 kD), donkey bone oligopeptide solution was obtained, and the donkey bone oligopeptide product was obtained by spray drying, with the yield of 40.20%, and the purity of the product was 91.02%. The calcium chelate content of donkey bone oligopeptide was 23.12 μg mg −1 , and the molecular weight of donkey bone oligopeptide was 239–894 Da by dextran gel chromatography using Sephadex G‐25, and the antioxidant ability, blood pressure‐lowering function, and anti‐osteoporosis function of the donkey bone oligopeptide were investigated, so as to provide a theoretical basis for the development of the donkey bone oligopeptide market.
