Background: Meatballs (Pentol) are a commonly consumed food that are often susceptible to bacterial contamination. They are popular among students. However, the food safety of meatballs is a concern due to the potential for contamination with pathogenic bacteria. Purpose: To analyze the presence of Escherichia coli and Salmonella sp. in meatballs sold around the UNG campus. Method: This quantitative descriptive study involved five fish meatball vendors, both on and off campus. The sample size was the same as the population, with each sample weighing 25 grams, equivalent to three meatballs. Data analysis used the Most Probable Number (MPN) method. Results: A total of five samples were examined, and all tested positive for Escherichia coli and Salmonella sp. in fish meatballs using Salmonella Shigela Agar (SSA) media. Conclusion: Escherichia coli bacteria were present in fish meatballs using the Most Probable Number (MPN) method in five meatball samples from fish meatball vendors. The results of this study did not meet the requirements of SNI No. 7388:2009. Analisis data menggunakan metode Most Probable Number (MPN).
