Connecting climate crisis and Use-By Dates: the need to reset refrigeration temperature standards

As the climate crisis accelerates, South Korea's 10°C refrigeration standard is becoming outdated and vulnerable. The effectiveness of the 'Use-By Date' system, aimed at reducing food waste, is severely undermined by inadequate cold chain management and low industry participation. This study quantitatively analyzes the correlation between climate factors and foodborne illness, diagnoses cold chain vulnerabilities, and evaluates the socioeconomic feasibility of lowering the standard to 5°C from stakeholder perspectives. The findings confirm a strong scientific and economic rationale for a phased transition to this stricter standard. We conclude by proposing an integrated policy roadmap that synchronizes the strengthened temperature standard with the Use-By Date system, creating a virtuous cycle to enhance food safety, reduce waste, and boost K-Food's global competitiveness.
