Probióticos y gelación iónica: una alternativa para el bienestar intestinal en humanos
Encapsulation of probiotics, especially by ionic gelation, is key to optimizing their effectiveness and ensuring that they reach the intestine, where they can improve intestinal health. This technique protects probiotics from adverse conditions in the digestive system and facilitates their controlled release into the intestine, maximizing their benefit. In addition, ionic gelation is simple, inexpensive and safe, which allows its use in the production of probiotic foods and supplements. Thus, the positive impact of probiotics is enhanced, improving the balance of the microbiota and contributing to better digestion.
