Construction of an inactivation model for salmonella enteritidis on egg surfaces using slightly acidic electrolyzed water and ultraviolet light based on a tertiary model

A tertiary model was developed to predict the inactivation kinetics of Salmonella Enteritidis on egg surfaces under combined slightly acidic electrolyzed water (SAEW) and ultraviolet (UV) treatment, parameterized by treatment time, available chlorine concentration (ACC), and organic matter (manure). The model exhibited high predictive accuracy (adjusted R 2 = 0.973; RMSE = 0.18). In manure-free conditions, efficacy increased with time (linear term = 0.3985; quadratic term = −0.0265) and ACC (0.0416; p < 0.05); with manure, these effects were attenuated (time: linear = 0.023; quadratic = 0.0015; ACC = 0.0121). The time × ACC interaction significantly affected the probability of complete inactivation ( p < 0.05), with the interaction coefficient rising from 0.0042 (no manure) to 0.097 (manure). Monte Carlo simulations indicated a higher probability of moderate inactivation (40–70 %; p < 0.05) under manure contamination and quantified residual-contamination risk following SAEW + UV. These quantitative results support risk-based optimization of egg disinfection protocols. • Developed a SAEW + UV disinfection model for S. Enteritidis , integrating time, organic interference, and SAEW of ACC. • All variables significantly affected disinfection, with an interaction between time and ACC. • Organics reduced the quadratic and linear effects of time on disinfection. • Organics reduced the linear effect of ACC and increased its interaction with time. • Model proposed for assessing S. Enteritidis microbial risks on egg.
