Comprehensive processing of chokeberry berries for juice production and active substance isolation

Currently, significant attention in Russia is paid to resource-saving technologies for processing raw materials, including berries. Black chokeberry is a source of various biologically active substances that influence human health. Today, chokeberry is cultivated on an industrial scale, with berries harvested for the pharmaceutical and food industries. Black chokeberry is a frost-resistant plant. Its growing areas include Altai, Siberia, Central Russia, the Urals, and Yakutia. In southern regions, chokeberry is found in Ukraine, the Republic of Belarus, Kazakhstan, Asia, and the Caucasus. Resource-saving technologies and the processing of secondary raw materials are strategic tasks for the development of the Russian Federation and a priority direction for scientific and technological development and the rational use of natural resources. The development of technologies for the comprehensive processing of berries allows for the extraction and rational use of biologically active substances in human nutrition, for the production of medicinal preparations in medicine and biologically active additives in pharmacy, public catering, and the food industry. The article reflects the chemical composition of wild chokeberry from the Novosibirsk Region and the potential uses of berry raw materials. The term “wild” usually refers to wild-growing, i.e. non-cultivated plants that are suitable for human consumption. Attention is given to individual components and their significance in human nutrition, as well as their use in the food industry, medicine, and pharmacy. All known technologies for the comprehensive processing of chokeberry and their impact on juice yield and active substances isolation are discussed.
