The impact of transportation vibration on the storage quality and physiological characteristics of fruits and vegetables

Vibration stress during fresh fruits and vegetables during storage and transportation significantly contributes to quality deterioration. This article investigates the mechanisms by which transport vibrations impact storage quality of fruits and vegetables. It reviews the current status and research methodologies for fruit and vegetable storage and transportation, from both domestic and international perspectives. The analysis begins with the resonance frequency, followed by simulated and actual transportation experiments. It examines the conditions and influencing factors of transport vibrations, exploring the underlying causes of quality deterioration during storage and transportation. This manuscript provides a critical analysis of changes in quality attributes, including visual appearance, firmness, texture and total phenols, along with physiological changes such as respiration rates, ethylene and malondialdehyde levels and enzyme activities. Based on these findings, the article evaluates limitations of current research and presents a visionary outlook on potential advancements. The primary objective is to refine and improve preventive strategies to mitigate quality degradation. Consequently, this work serves as an important reference for reducing quality deterioration during storage and transportation of fruits and vegetables and developing more accurate detection methods.
