Determination of some mechanical and nutritional indices of cassava tuber in Phu Tho province, Vietnam

Cassava is a tuber rich in starch and nutrients such as glucid, protein, lipid, vitamins and minerals. This study aimed to determine the mechanical and nutritional indices of cassava tuber in Phu Tho province, Vietnam. Results showed that the average weight of cassava tubers was 1.52±0.24 kg, the average length was 36.76±3.45 cm, starch content was 34.72±1.24 g, protein content was 3.83±0.72 g, the lipid content was 0.35±0.05 g, and the fiber content was 2.03±0.03 g. The collected data will serve as a basis for suitable technology selection for cassava processing.
