Modern Food Supply Chains: A Systematic Literature Review
Several types of food supply chains exist in the modern era. They can be categorized into three main groups: local, domestic/regional, and global. Each have their own benefits, drawbacks, and risks. In this paper, we conduct a systematic literature review which addresses the similarities and differences in such factors between these types of supply chains. We also discuss how the modernization of the food industry has altered risk and risk mitigation throughout the food supply chain. This work will provide a framework for the factors which should be considered in quantitative risk and risk mitigation models in the food industry.
