Abate, peso e condenações das carcaças de bovinos abatidos em Santarém – Pará, entre os anos de 2013 a 2015

Brazil stands out on the world beef scenario for having the largest commercial herd, being the second largest producer and the largest exporter. This study aimed to assess the slaughter rates and weights and condemnations of carcasses of cattle slaughtered in Santarém – Pará, Brazil, between the years 2013 and 2015. An analysis of monthly slaughter records during this period was conducted using data obtained from a slaughterhouse operating under the Federal Inspection Service (SIF). The analysis and presentation of the data was descriptive through graphs. The bovine female category was less frequently sent for slaughter, accounting for only 29.58% of the total. The average carcass weight closely mirrored the national average, and the carcasses belonging to the female sex category exhibited higher condemnation rates, with tuberculosis and bruising emerging as the primary causes for carcass condemnation.
