Experimental study on vacuum freeze-drying process of cucumber based on orthogonal experiment and regression analysis
Abstract Vacuum freeze-drying is a special drying technology. The optimization of the drying time of the vacuum freeze-drying has important value in ensuring material quality and reducing energy consumption. This article takes the cucumber as the object. Based on the introduction of the vacuum freeze-drying process for the cucumber, the importance of the research on the drying time of the cucumber was determined. The eutectic temperature of the cucumber was measured by the electrical resistance method. The time of final freezing and sublimation drying of the cucumber was determined by the theoretical calculation and verified by the experiments. The drying time of the cucumber was studied by the orthogonal experiment, and the optimal scheme of the drying time was determined. Based on the regression analysis, the optimal regression equation of the drying time of the cucumber was determined, and the validity of the equation was verified.
