TRENDS IN MOLECULAR GASTRONOMY
• Molecular gastronomy allows chefs to push the boundaries of traditional cooking, creating visually stunning and innovative dishes that surprise and delight diners. • Techniques like sous-vide and controlled emulsification ensure precise cooking, leading to consistently perfect flavors, textures, and presentations. • By combining science and art, molecular gastronomy engages multiple senses, offering diners a unique experience through unexpected textures, flavors, and visual presentations. Molecular gastronomy a fusion of the food science and culinary art, applies scientific principles to modify and transform ingredients and culinary techniques. By understanding the physical and chemical mechanism and properties of food, many scientists and researchers creates various innovative foods with different unique textures, flavors and appearance. Recent trends in the molecular gastronomy highlight the importance of eco-conscious practices by incorporating plant-based ingredients, microbes and different novel techniques to generate novel foods. Additionally, advancements in food technology such as 3D printing such as customization of food products with novel ingredients and complex geometric structure with the personalized nutritional foods products has also been evolved and developed. This paper mainly aims to focus on the recent advancements in the MG and the recent trends in the foods with the different technologies have also been discussed. Different methodology which includes the foam and emulsion, Gelation, smoke infusion, specification techniques and methodologies has been implemented in the food products to improve the product sustainability, product consistency and public acceptance towards the product. Various products such as encapsulated product, nano products, 3D printed product, functional foods and novel foods has also been developed with the emerging MG techniques. The benefits and challenges in the MG foods and the new culinary future trends have been discussed with MG.
