ANALYSIS OF THE CURRENT STATE OF THE PUBLIC CATERING MARKET IN RECREATIONAL AREAS OF THE AZOV COAST OF THE DONETSK PEOPLE'S REPUBLIC

The article examines the current state of the public catering market in recreational areas of the Azov coast of the Donetsk People's Republic. The work reveals specific features of the functioning of public catering establishments at two stages: in the period before 2014 and in the conditions after the integration of the region into the economic space of Russia. As part of the study of market conditions, information on the number of catering establishments in the resort cities of the Azov coast in the territory of the Donetsk People's Republic was systematized, a structural analysis of existing catering establishments was carried out with their subsequent differentiation according to the criterion of the dominant culinary concept, and a characteristic of the gastronomic identity of the Azov region was given. Prognostic estimates of the growth dynamics of the number of catering facilities on the Azov coast of the Donetsk People's Republic are presented.
