Comparative evaluation of meat productivity and meat quality of geese of different breeds

Until now, the meat productivity of Lindovskaya breed of geese and especially the Large Gray breed of geese has not been suffi ciently studied. The purpose of the research was to carry out a comparative evaluation of the meat productivity and meat quality of Lindovskaya and Large Gray breeds of geese. In order to study the meat productivity and meat quality of 9-week-old geese a control slaughter of goslings was carried out in the slaughterhouse of the Department of Storage and Processing Technology of Livestock Products of the Russian State Agrarian University – Moscow Timiryazev Agricultural Academy. The chemical composition of the meat was determined at the All-Russian Research Institute of Poultry Processing Industry – a branch of the All-Russian Research and Technological Institute of Poultry Farming. The results of the control slaughter showed that the live weight, gutted carcass weight and muscle weight of goslings of Lindovskaya breed were higher by 370.0 g or 7.0 % (p ≤ 0.05), 286.9 g or 8.4 % (p ≤ 0.01) and 379.2 g or 22.1 % (p ≤ 0.001), respectively, compared to goslings of Large Grey breed. The content of edible parts in carcasses of goslings of Lindovskaya breed was 2017.0 g, which was higher than in herdmates of Large Grey breed by 209.6 g or 10.4 % (p ≤ 0.05). The content of skin with subcutaneous fat and the weight of internal fat were higher in goslings of Large Grey breed by 48.9 g or 6.3 % and 81.6 g or 21.3 %, respectively. Determination of the chemical composition of meat showed that the average sample of meat in gosling of Lindovskaya breed contained 0.7 and 1.7 abs.% more moisture and protein, respectively, compared to goslings of Large Gray breed, and goslings of Large Gray breed contained by 2.5 abs.% more fat in their meat compared to their herdmates of Lindovskaya breed. Consequently the meat of goslings of Lindovskaya breed was leaner.
