SOME PHYSICO-CHEMICAL PARAMETERS OF BASHKIR HONEY

Honey is one of the oldest natural products, which is widely used both for food purposes, as well as for medicinal and cosmetic purposes. In modern conditions of growing interest in natural products and a healthy lifestyle, the issues of quality and authenticity of honey are becoming particularly relevant. Physico-chemical parameters of honey are the most important criteria for its quality and authenticity. They allow not only to evaluate the naturalness of the product, but also to determine its biological value, as well as predict the shelf life and conditions. Some physico-chemical parameters of honey samples from the northern part of the Republic of Bashkortostan were evaluated, such as pH, moisture content, electrical conductivity, total sugar content, flavonoids, and ascorbic acid.
