RATIONAL ORGANIZATION OF WORK OF RESTAURANT STAFF: PROBLEMS AND SOLUTIONS

The restaurant business is one of the most dynamic and competitive sectors of the economy, where the quality of customer service directly depends on the effective organization of staff labor. Successful operation of a catering establishment is impossible without a well-established system of labor management. Proper planning of work processes, distribution of functional responsibilities, creation of favorable working conditions and motivation of employees contribute not only to increasing productivity, but also to the formation of a positive image of the restaurant among visitors. However, in practice, many enterprises of restaurant household production are faced with a number of problems in the organization of personnel labor, which negatively affects the effectiveness of their functioning. That is why the issue of identifying the main difficulties in this area and finding effective ways to solve them is relevant. Among the most common problems, it is worth highlighting the high turnover of personnel, which is associated with low wages, lack of career growth and excessive physical and emotional stress. Often restaurant workers, especially service personnel, work under stressful conditions, which leads to burnout and a decrease in the quality of customer service. Another common problem is inefficient scheduling of work schedules, when there are either not enough employees or, conversely, too many of them, which creates an imbalance in the load of change and worsens the atmosphere in the team. In addition, the lack of a system of adaptation and training for new employees greatly complicates the process of their entry into the workflow, reduces productivity and increases the risk of errors. Unclear distribution of responsibilities between team members, lack of communication on the part of management and inconsistency of actions between the kitchen and the hall also create barriers to effective labor organization. In some cases, there is a disregard for service standards, which reduces the level of customer satisfaction and negatively affects the reputation of the institution. To overcome these problems, it is necessary to introduce an integrated approach to the organization of personnel labor. This involves the development of clear job descriptions, improvement of the system of selection and training of personnel, the use of modern software solutions for the formation of work schedules, the creation of a comfortable working environment and a stimulating motivation system. It is also important to work on the formation of a healthy microclimate in the team, based on respect, support and team interaction. Thus, the rational organization of labor allows not only to avoid unnecessary costs, but also to provide a high level of service, which is the key to the competitiveness of the restaurant
