Development of Nutritional Enriched Cookies with Moringa oleifera L. (Moringaceae) Extract
Moringa oleifera, a tropical perennial plant, is known by various names across different regions. Rich in essential nutrients, all parts of this plant have been widely used in traditional medicine across South Asia and Africa to treat ailments such as skin infections, kidney stones, diabetes, anemia, high blood pressure, arthritis, ulcers, helminthiasis, and malnourishment. The significant medicinal and nutritional properties of M. oleifera have led to its incorporation in diverse sectors, such as agriculture, baking, cosmetics, and biofuel. The baking industry utilizes the powdered and extracted forms of its leaves, stems, and fruits to improve the nutritional value of cookies and bread. M. oleifera is particularly valued for its antioxidant, antidiabetic, and anticancer properties. Similarly, Sattu, a traditional Indian food made from roasted chickpeas, is a highly nutritious ingredient known for its energy-boosting, detoxifying, digestive, and weight-management benefits. However, the industrial development of Sattu-based products remains limited due to a lack of research on its processing techniques. To address this gap, a novel approach has been explored by combining Sattu with M. oleifera leaf extract to develop nutrient-enriched cookies. These delicious cookies possess enhanced antioxidant, antimicrobial, and anticancer properties, making them a convenient and functional food option for promoting health and well-being. .
