Abstract 2388 Exploring the antioxidant potential of watercress and its component kaempferol in scavenging oxidants on serum albumin under oxidative stress
Plant-based antioxidants are compounds present in some plants that are capable of neutralizing harmful oxidants and reducing oxidative stress. Oxidative stress is a significant contributor to the development and progression of most chronic diseases, investigating how plant extracts will protect biomolecules and scavenge free radicals causing oxidative damage is essential and can add to the body of evidence supporting the use of plant-based antioxidants. Human serum albumin (HSA) is the most abundant protein in blood plasma.
